Elevating Cannabis Edibles to a Whole New Level

We sat down with Chef Jordan Wagman, a 30-year veteran of the hospitality industry, podcaster, bestselling book author, and long-time cannabis enthusiast to talk about his revolutionary stance on cannabis-infused cooking.
According to Chef Jordan, unhealthy cannabis food is a common issue found in the edibles sector, since many of the edibles currently available on the market are full of unhealthy, counterproductive ingredients.
While this trend is slowly beginning to shift, healthier alternatives are largely overshadowed by the unhealthy edible options that are much more widely available. Chef Jordan explains,
“There are companies that are trying to make healthier [cannabis] food stuff, but still, it just doesn’t exist.”
With this in mind, he’s taken it upon himself to start single-handedly changing the perspectives of new and veteran cannabis users alike about how they can take advantage of cannabis-infused food.
Consistency is Key with Cannabis Edibles
Since its legalization, the cannabis market has exploded in Canada. This includes a massive variety of new edibles and cannabis drinks that have emerged.
Cannabis may come in many forms, but for cannabis users still purchasing illegal cannabis edibles and cannabis drinks from grey market dispensaries, they’re taking a much bigger personal risk than they may realize.
For new users especially, this can ultimately ruin cannabis for them before they’ve even really had a chance to figure out how cannabis can benefit them. Chef Jordan tells us,
“Everything depends on what I’m cooking. The forms in which I cook with the cannabis – I will use distillates, isolates, I will use raw flower, I use tons of terpenes – what’s really critical is this: I have 4L of infused coconut oil in my basement that’s been there for 4-5 years, and I’ll take a little nugget of it now and again, and I’ll eat it. I will never use that to cook for clients – EVER.
There’s something called a repeatable experience. I want you to come for the dinner you booked and then come back two years later and have a very similar experience. I can’t have you come and eat an edible, and 3 weeks later take one of those edibles home, and then have a different experience. That’s not creating that repeatability, and what happens inevitably is you lose that person. They can green out, they don’t have a good experience, etc. I will only use products that I buy, that I have labs, and I know where it’s coming from. The purpose of my experience isn’t to get you high, it’s to experience the whole plant. I encourage people to buy their cannabis, their distillates, their isolates, from reputable sources so they know what’s in it and its potency.”

It’s taken me many years to realize that my psoriasis, my inflammation, really reacts well to cannabis in its acid form – so non-decarboxylated cannabis – but that’s just me. And our endocannabinoid systems are so different. They differ from person to person. So, I think, we have to find what works for us [individually].”
